Vegetable Crush Smoothie
You can throw just about anything in a fruit smoothie to enhance its flavor such as honey, tofu, jams, any combination of fruits, peanut butter, juices, etc., but keep in mind it will effect the nutritional values.
1 tomato, cored and sliced 2 stalks celery, trimmed and sliced 1 large red bell pepper, deseeded and sliced 1 small clove garlic, peeled 6 ice cubes 6 fresh basil leaves Salt and pepper, to taste (optional)
Process all the ingredients, except the salt and pepper (if using), in a blender until smooth. Add the salt and pepper and mix well.
Getting four of five servings of vegetables daily is important, regardless of how they're prepared, say Cynthia Sass, R.D., a spokesperson for the American Dietetic Association and author of Your Diet Is Driving Me Crazy (Marlowe & Co.,2004). Eating brussels sprouts with butter or ranch dressing is better than not eating anything green at all. In fact, some fat helps you better absorb crucial nutrients such as beta-carotene and other phytochemicals. But try to make that fat the good kind, like olive oil, olive pesto or sun-dried-tomato pesto.
